"PLAY WITH YOUR FOOD" EP. 4: OVEN CHICKEN KABOBS & BEACHY PLAYLIST

WELCOME to episode 4 of our recipe and playlist series, "Play With Your Food"!! Make sure to check out our previous 3 episodes for some good eats and vibes to match!

WE could not be more excited for warm days at the beach, so today we are going to be sharing with you an AMAZING chicken kabob recipe that can be made in the oven (for all us NYC people without a grill). They are perfect to back up for the beach as well!

 

The recipe itself is super simple!

 

BUT! The first step comes the night before...

The first step is to marinate 12 wooden kabob skewers in a bowl of water overnight, so that they don't burn in the oven.

The next morning, make the marinade below!

To make 12 Kabobs:

Marinate 3 pounds of boneless, skinless chicken breast (cut into medium chunks) in a whisked mixture of:

- 1/2 cup of avocado or olive oil

- 4 tablespoons lemon juice

- 1 tablespoon fresh chopped parsley

- 1 teaspoon salt

- 1/2 teaspoon pepper

- 1/2 teaspoon garlic powder

 

Place chicken and marinade in a large Ziploc bag and let refrigerate for 4-6 hours.

 

Preheat the oven to 450 degrees, and begin constructing your kabobs.

You can really put any kind of chopped veggies on, but we really love them with onion, peppers and tomatoes. Make sure they are alternating, leaving enough room on both ends the skewers to hold them.

 

Line two baking sheets with aluminum foil and bake for about 25-30 minutes, flipping the skewers halfway through.

*An additional 5-10 min of baking may be necessary depending on the thickness of your chicken.

 

AND! That's it! Perfect for lunch, or a quick snack!
