Today we are going to be making Chicken Pad Thai and giving you the PERFECT playlist for chill dinner vibes. Also perfect for playing while you're cooking! Check out our "CHILL DINNER MIX" before you get started!
Chicken Pad Thai is one of our favorite meals! ANDDD... it turns out to be an easy and fast recipe that you can make right in your own kitchen.
You can also substitute the chicken for tofu! This recipe makes 2 servings.
The Ingredients You'll Need:
- 4 oz. pack of rice noodles
- 1 large shallot
- 4 chopped garlic cloves
- 2 eggs
- salt
- 2 tablespoons peanut OR coconut oil
- 2-3 tablespoons fish sauce
- 3 tablespoons brown sugar
- 3 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 1 pack of bean sprouts
- 1 tablespoon chopped ginger
Let's get cookin'
Step 1:
Boil the rice noodles as instructed on packaging (usually good 7-8 min after water boils)
Step 2:
Chop 1 large shallot, 4 cloves of garlic & 1 tablespoon while noodles are boiling and set aside
Step 3:
Whisk 2 eggs in a small bowl with a fork and add a large pinch of salt (set aside)
Step 4:
Start making the sauce. Whisk fish sauce (2-3 tbs.), rice wine vinegar (3 tbs.), brown sugar (3 tbs.) & soy sauce (tsp.) in a bowl and set aside.
Step 5:
Slice your chicken breasts thinly and season with salt and pepper while cooking. Sear on the stove in a large frying pan on medium to high heat until cooked through. Place on plate and let cool.
Step 6:
In the same pan, heat up either peanut or coconut oil. Cook the chopped shallot, garlic & ginger until golden on medium heat. sauce combination and whisked eggs together. Add whisked eggs into a well in the center of the pan and gently mix together.
Step 7:
Add the rice noodles directly to the pan (with egg, shallot, garlic and ginger). Flip and fry the noodles for 3-4 constant minutes.
Step 8:
Mix your sauce (fish sauce, brown sugar, rice wine vinegar & soy sauce) into the pan. Add cooked chicken and toss the mixture for a few more minutes. Add a little bit of water if the mixture seems way too dry.
(*it will smell fishy at first, but will smell less as it cooks!)
Step 9:
Turn off pan and mix in a handful of bean sprouts, peanuts and chopped scallions. Squeeze a little bit of fresh lime juice in! Taste for salt and adjust accordingly.
Step 10:
Plate your Pad Thai and garnish with more bean sprouts! Add sriracha or red pepper flakes if you want to add some spice!
